perfect slow cooker recipes for a rainy day

Part of the reason I love fall has to do with the many, many recipes that are better suited for a cool day. Chilis and soups are yummy all the time, but not ideal on a warm and sunny summer day. The smell of dinner slowly simmering in a crock pot on a fall day gives me all the fall feels. Gloomy, rainy days are EXTRA great for a slow cooking dinner. So, I rounded up some perfect slow cooker recipes for a rainy fall day that my family loves!

Chilis

A yummy chili is one of my favorite things to eat on a cold, rainy fall day. We like both a classic chili and a white chicken chili. Pair them with homemade corn bread for a homestyle meal or tortilla strips + sour cream for a more mexican dinner feel.

Soups

Some people are only soup fans when they are sick, but we’re not those kind of people at all. Our favorites include the classic chicken noodle, pasta e fagioli, and and chicken enchilada soup. On a cold day, my husband is the first one to say “it’s a soup kind of day” and immediately start looking for a great recipe.

Comfort foods

Using your slow cooker doesn’t always have to be a liquid meal, it is great for making some comfort foods as well. For instance macaroni and cheese. Some of the best mac + cheese I have ever had came out of a crock pot. Other options we use include baked ziti and chicken + dumplings.

Full meals

One of the greatest things about a slow cooker is the ability to cook a full meal. A protein, vegetable, and starch in one dish, at one time. As a mom of two toddlers, this is a huge plus for me. Things like chicken burrito bowls, shepherds pie, and pot roast frequent our dinner table often.

Snacks

Aside from meals, you can also make a ton of great snacks/appetizers in a slow cooker. Being from Maryland, we are HUGE crab dip lovers so that is an obvious choice of ours. You can also make desserts like caramel apple crumble or caramel popcorn.
